Abstract

Article discusses various methods for assessing the quality indicators of dairy products in production and distribution process. Along with assessment of indicators of production process, assessment of processes of commodity circulation was carried out. As an object of study, soft cheeses were considered, indicators of which were evaluated in production and distribution process. Results of studies made it possible to conclude that, along with organoleptic and physico-chemical research methods, it is advisable to use statistical tools that allow us to offer reasonable conclusions when making decisions related to sale of products.
